In 1992, Chef Marie-Claire Dubois opened the doors of La Belle Cuisine in a modest corner space in downtown's historic district. With just twelve tables, a small but dedicated team, and an unwavering commitment to culinary excellence, she set out to create something extraordinary.
Inspired by her grandmother's recipes from the French countryside and her formal training at Le Cordon Bleu in Paris, Marie-Claire crafted a menu that married classic techniques with bold, innovative flavors. The philosophy was simple: source the finest local ingredients, treat them with respect, and let their natural beauty shine.
